Alechemy Brewing was founded by James Davies after taking voluntary redundancy from a position in the pharmaceutical industry. James started homebrewing in 1995 while studying at university in Edinburgh for a Masters Degree in Chemistry, followed by a PhD in microbiology where he studied, among other things, the genetics of brewery yeast. He returned to Scotland from Nottingham in 2011 to start up the brewery. James then recruited Adam Davies to help with the start up and running of the brewery having worked as Director of Babcock Rail before his retirement in 2010. The brewery's official launch was on April 18, 2012 at Cloisters Bar in Edinburgh.
The brewery plans to incorporate two brewing plants: the main plant built by Brewfab Ltd in Fraserburgh that is a 10bbl (1650 litre) system , and a pilot plant used for recipe development and specialty products that is a 0.5bbl (100 litre) system. The brewery plans to produce both cask-conditioned ales and bottled beers. In addition to the noted regular beers, a number of seasonals are also produced.
- Five Sisters - % ABV
- A rich, dark amber beer brewed with a British malt base and hopped with American Chinook.
- Cairnpapple IPA - % ABV
- A light coloured, well balanced IPA style beer with a floral aroma and citrus aftertaste.
- Cockleroy Black IPA - % ABV
- An IPA brewed with dark malts but still having a characteristic floral and citrus aroma and taste.
