It took from 1993 to early 2004 for the Cuillin Brewery at Sligachan on Isle of Skye to move from idea to inception. The old public bar at Sligachan Hotel was transformed from a storage area into the brewery today. The 5 barrel brewing plant was purchased from AB Bottling UK having been originally installed at the Physician and Firkin pub in Edinburgh. Brewing commenced on 10 September 2004.
The brewery produces four cask ales regularly as well as doing various special bottlings. The beers are available at Seamus's Bar at the Sligachan Hotel.
- Skye Ale - 4.1% ABV
- Cuillin's flagship ale. Golden brown in colour with a slightly nutty flavour but well balanced.
- Black Face - 4.3% ABV
- A dark stout style ale with a creamy head and chocolate notes with a touch of heather honey.
- Eagle Ale - 3.8% ABV
- A golden coloured ale with notes of caramel. Lightly hopped session style ale.
- Pinnacle - 4.7% ABV
- An amber coloured ale with a full bodied, well rounded malty flavour, hoppy aroma and bittersweet aftertaste.
